A Safe Treat

I  love a treat on the weekend that doesn't have to ruin a week of hard work.  
This is one of my favorite:

Crust:  1 1/2 Cups Almond Flour, 1/2 Cup Melted Butter, 1 Sm. Package Stevia, and 3/4 tsp. Cinnamon.


Whipped Center:  1 Pint Heavy Whipping Cream, Vanilla Extract, 1 Sm. Package Stevia, Other Flavorings, if Desired.

Instructions:  Combine the crust ingredients and mix well.  Place the mixture in a springform pan or divide into paper baking cups as pictured.  Bake at 300 degrees until it forms a lightly browned crust.  Let cool.

With a standing mixer fitted with a whisk attachment, start slowly and and increase speed until the cream thickens.  Watch for a soft peak.

Top with berries or extra dark chocolate chips.   Enjoy!

Pixel Journal

I have tried a LOT of different ways to stay motivated.  I believe everyone has to find their own way in this department.  About a month ago I learned about a Pixel Journal.  This was a game changer for me.  I made a quick simple table of boxes, placed one of my favorite scriptures at the top of the page, and started personalizing the boxes as I met my goals for the day.  What keeps you motivated???
